- ½ cup coconut milk or cream
- 3 scoops Clean Lean Protein Wild Strawberry
- ¼ dragon fruit (with pink flesh inside – for the colour)
- 1 cup desiccated coconut
- 3 Medjool dates
- 1 Tbsp. maple syrup
- Filtered water, if needed for desired consistency
- 2 Tbsp linseeds
- ½ cup activated buckwheat
- ½ cup cashews
- Blend all ingredients except the buckwheat into a food processor.
- Add and fold in buckwheat.
- Roll the mixture into balls and roll into desiccated coconut or topping of choice.
- Refrigerate prior to serving OR freeze up to 5 days if you are not ready to eat.
